Why the Base Turns

Decorating a cake means working the same edge from every angle, and the usual way to do that is to pick the cake up and rotate it, which is how a finished side gets a thumbprint in it. A turning base removes the handling entirely. The same thing matters after the cake is cut: a covered cake dries fastest at the exposed face, and lifting the dome to look at it is what dries it. What the Dome Actually Does
