An open carafe on a table collects whatever falls into it. A lid is the entire argument for a bottle over a jug, and twelve of them means every place setting gets water that nobody else has reached into.

  • Covered between pours Dust, a stray crumb and an insect all stop at the lid rather than in the water.
  • One per setting Twelve bottles covers a long table without anything being passed hand to hand.
  • Nine inches tall Slim enough to stand beside a place setting instead of taking the middle.

Why a Lid Changes a Table

Water sitting uncovered for an hour is water that has been open to the room for an hour. On a dining table that is mostly a matter of appearance; at a meeting, an outdoor lunch or anywhere food is being served nearby, it stops being cosmetic. A closed bottle also travels, which an open carafe never can, so the same vessel goes from a refrigerator to a table to a desk without being decanted into something else.

Twelve and the Long Table

The point of twelve is that nobody reaches. A jug in the middle of a table means people ask, lean or wait; a bottle at each place removes all three. It is how restaurants that care about the detail set water, and it costs nothing at home except the shelf space to keep twelve slim bottles, which stand rather than stack.

Glass and Nine Inches

The height is what keeps the footprint small. Nine inches tall on a narrow base takes very little of a crowded place setting, where a squat carafe of the same volume would want twice the table. Glass adds the second half: you can see the level from across the table, so refilling happens before anyone has to ask.

Storing, Chilling and Washing

What does 17 ounces cover? A little over two standard glasses, which is one person through a meal. Across twelve that is around sixteen pints of water at the table at once.

Do the lids seal tightly enough to carry? They seat rather than screw down, so a bottle carries upright without spilling but is not something to lay flat in a bag.

Where do twelve bottles live? Standing, in a single row, taking about eighteen inches of shelf. They do not nest and stacking a bottle on its side is how a lid gets lost.
