A sprung tong decides the pressure for you. A scissor tong hands that decision back, because the only force on the food is the force your fingers put there, and on anything soft that is the difference between lifting a slice and destroying it.

  • You set the pressure No spring pushing back, so a meringue takes exactly as much grip as it needs.
  • Flat plates, not tips The contact is two broad surfaces rather than two points that dig in.
  • Just under eight inches Long enough to reach across a stand without leaning over the food.

Where a Spring Goes Wrong

Sprung tongs are built to stay open, which means you are working against the spring the whole time you hold them closed. On something firm that is fine. On a cream slice, a soft cheese or a warm pastry, the moment your grip relaxes the spring does not, and the item is either dropped or crushed. A pivot removes the spring from the equation, so the tongs hold whatever you tell them to hold and nothing more.

Why the Plates Are Flat

Tips concentrate force into two small areas, which is exactly what you do not want under a delicate slice. Broad flat plates spread the same grip over a much larger contact patch, so the pressure per square inch drops and the surface survives. The same geometry lets the plates slide underneath rather than pinch from the sides, which is how a tart moves without its edge collapsing.

A Piece That Matches the Rest

Degrenne builds its holloware to work alongside its other ranges, which means a serving piece bought on its own still looks like it belongs on a table already laid with the brand. That is worth knowing if you are adding to something rather than starting fresh, because mixed serving pieces are the detail that makes a considered table look assembled.

Grip, Cleaning and Other Uses

Will it handle something heavy? Within reason. A scissor action multiplies grip through the pivot, so a dense slice of terrine is comfortable, while anything requiring a real clamp wants a purpose-built tool.

Does a machine wash hurt them? No, and the simple mechanism is why. There is no spring to weaken and no hinge housing for water to sit inside, so a scissor tong comes out of a dishwasher exactly as it went in.

What else are these good for? Bread, canapes, sandwiches cut small, and anything on a buffet that guests serve themselves. The flat plates make them forgiving in an unpracticed hand.
