Six cocottes arrive, not one. Each is 6.9 inches across and finished with a ring of blue at the rim, which Degrenne calls a halo, and the six of them are what turn a single dish into a course served the same way to everyone at the table.
- Six to a case A table of six eats the same course from the same vessel, with nothing borrowed from another set.
- Blue held at the rim The color frames the food from above rather than sitting underneath it where it vanishes.
- Cocotte depth, not plate depth Deep enough to hold a portion of stew instead of letting it spread and cool.
Why Six Changes the Purchase
A single serving dish is a piece of tableware. Six identical ones are a service. The reason restaurants buy cocottes in multiples is that individual plating only works when every plate matches, and a mismatched sixth breaks the effect more than a plain bowl would have. Buying the set is what makes individual service possible at home without hunting for a second one later.
What the Halo Does
Degrenne describes the blue ring at the rim as a halo, and on a filled cocotte you can see the reasoning. Decoration in the base of a serving vessel is invisible the moment food goes in. A ring at the lip stays in view for the whole course and gives the eye an edge to read the portion against, which is why the blue is concentrated where it is rather than spread across the piece.
Portion Size at 6.9 Inches
Six and nine tenths of an inch is an individual portion rather than a shared one. It takes a serving of a braise, a gratin for one, a soup that is thick enough to need a bowl with sides, or a dessert that has to arrive in the vessel it was cooked in. If your habit is to bring one large dish to the table and let people help themselves, six small vessels are the opposite of that habit and will feel like extra washing up rather than extra care.
Ovens, Sets and Color
Can porcelain cocottes go from the oven to the table? Porcelain handles oven heat well and holds it afterward, which is most of why the shape exists. What it does not tolerate is a sudden change: straight from a refrigerator into a hot oven is how any fired ceramic cracks, so let a filled cocotte come up to room temperature first.
Do all six pieces carry the same blue? They are made as a set from one collection, so the halo is the same treatment across the six. Small differences in how a glaze catches the light are normal on fired porcelain and are not a defect in any of them.
Is 6.9 inches a starter size or a main size? It depends entirely on what goes in. As a starter vessel for soup or a baked appetizer it is generous; as the whole main course it suits a rich braise where the portion is small by design rather than a plate of pasta.
